    BUFFY'S PASTA WITH OLIVES, GARLIC & PINE NUTS

 

3 T. fresh basil, chopped
1/2 c. small black olives cut in halves
1/4 tsp. salt
black pepper to taste
shaved Parmesan cheese
12 oz. pasta
2 T. pine nuts
1 1/2 T. extra virgin olive oil
2 cloves garlic, minced
2 c. tomatoes, chopped 
1/4 c. fresh parsley, chopped





Cook pasta according to package directions. Toast pine nuts in medium dry skillet over medium heat until partially brown, about two minutes. Remove from heat and set aside. Heat oil in same skillet over medium heat, add garlic and stir for twenty seconds. Add tomatoes, parsley and basil and cook, stirring frequently, for five minutes (until tomatoes are softened). Add olives and salt. Toss pasta and sauce and add pepper, Parmesan and pine nuts.

APRIL'S VERY EASY CHILI
 

1 1/2 c. water
garlic powder to taste
cumin powder to taste
chile powder to taste
salt & pepper to taste
1 lb. ground beef or ground chuck
1 med. onion
1 can (14.5 oz) stewed tomatoes
1 can tomato sauce (small or large, to
taste)
1 (15-oz.) can kidney beans
(Luck's recommended)







In a large saucepan combine the beef and onion and sauté until beef is browned and onion is tender. Add the stewed tomatoes with juice, tomato sauce, beans and water. Season with the chili powder, garlic or garlic powder, salt and pepper to taste. Bring to a boil, turn heat to low and let simmer 20-30 minutes. Serves about 4 people.
