SUSAN'S PERFECT PEANUT BUTTER COOKIES

 

1 c. creamy or chunky peanut butter
1 c. sugar
1 c. firmly packed brown sugar
2 eggs, beaten
1 tsp. vanilla extract

2 1/2 c. cups flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 c. butter or margarine





Preheat oven to 375°. In a mixing bowl, stir together the flour, baking powder, baking soda and salt. In a large mixing bowl, using an electric mixer, beat together the butter and the peanut butter until well blended and smooth. Beat in both sugars until well blended. Beat in the eggs and the vanilla. Add the flour mixture and beat until well blended. Shape the dough into 1 inch balls and, as you roll them, place them on an ungreased cookie sheet about 2 inches apart. Flatten each ball with a fork, making a crosshatch pattern on the dough. Bake for about 12 minutes, or until lightly browned. Remove with spatula and cool thoroughly on a wire rack. As good as the cookies are warm, they are even better (and crispier) when cooled and they continue to improve for a few days. Store them in a tin.

SHARI'S FAVORITE SNICKERDOODLES
 

2 tsp. cream of tartar
1 tsp. baking soda
2 T. cinnamon
2 T. sugar

1/2 c. butter or margarine, softened
1/2 c. shortening
1 1/2 c. sugar
2 eggs
2 1/4 c. flour



 

Heat oven to 400°. Mix butter, shortening, 1 1/2 cups sugar and eggs. Blend in flour, cream of tartar, soda and salt. Shape dough by rounded teaspoonfuls into balls. Mix 2 Tablespoons of sugar and cinnamon; roll balls of dough in mixture. Place 2 inches apart on ungreased baking sheet. Bake 8 to 10 minutes or until set. Immediately remove from baking sheet. Makes 6 dozen.
